    Wild Thyme Honey from the Mountains of Western Cretetop

    Greeks’ favorite honey because of its pungent aroma, bright amber color, and lasting floral flavor. It is produced in a limited quantity by a beekeeper who sets his hives in the rocky arid White Mountains of Western Crete inthe area of Sfakia and Apokoronas. Harvested manually in June and July when wild thyme blooms, pure wild thyme honey is rare in Greece, because it is the easiest honey to blend. We lab test the pollen in ours to ensure it's purity. This is a versatile honey. Pour it over cheeses, yogurt, and toast. It can also be used to sweeten and flavor sauces and marinates. Naturally soothes coughs and has anti-inflammatory and disinfectant qualities.

    Thyme and Wildflower Honey from the Aegean Islands top

    Following a 3000 year tradition, our beekeepers set their hives on the rocky, windswept hills of the Aegean islands. The result is a honey with a subtle thyme aroma and an intense floral aftertaste, perfect in teas, over yogurt, and on toast. Rich in enzymes that relieve inflammation.

    Wildflower Honey from Greek Macedonia in Northern Greece top

    When spring comes to Greek Macedonia, our beekeepers place their bees to feed on the colorful wild flowers blanketing the hillsides and produce this intensely floral, smooth, golden honey. It has an almost transparent golden color. A versatile honey, try it with teas, yogurt, toast and marinades. Rich with enzymes that improve digestion.

    Orange Blossom Honey from Epirus top

    When spring comes to Epirus, the air is heavy with the perfume of orange blossoms. Beekeepers set their hives to produce a honey with a fruity, robust sweetness that nicely accompanies yogurts, teas, and baked goods. Soothing and calming to the body.

    Chestnut Honey from Mount Pilio top

    Setting their hives in groves of wild chestnut trees, our beekeepers produce this distinctly woody, mildly sweet, and flavorful honey. Milder and more floral than the French and Italian chestnut honey. It nicely complements sharp cheeses and gives a savory taste to sauces and meats. Benefits digestion and improves mental acuity.

    Pine Honey from the island of Evia top

    The weeping pines of Evia cry sweetly, secreting a sugary sap from which the bees make an amber honey. An insect called "the worker" by the beekeepers, lives symbiotically with the pines and causes them to produce this sap. This honey is spicy and woody with a stimulating pine aroma that complements toast, teas and sauces. Naturally suppresses coughs and soothes the effects of colds.

    Heather Honey from Sterea Hellas top

    Collected in November as the winter closes in, this honey’s explosive sweetness and strong aroma remind us of the lost pleasures of summer. Earthy and grainy, Heather honey is excellent on toast, in cheeses, and as a base for sauces and marinades. Benefits the urinary system.

    Fir Honey from the mountains of Vitina top

    Famous for the beauty of their fir forests and the purity of their mountains’ air, the beekeepers of Vitina produce a delicately sweet and naturally creamy honey. Try it in teas, over yogurt, and on toast. Fir honey complements mild cheeses well. Benefits the digestive and respiratory systems.

    Storage and Handling
    Our honey naturally crystallizes because it is minimally processed. Some honeys will crystallize faster than others. To return a honey to its liquid form, gently heat it by placing it in a double bowl with hot water beneath or you may slightly warm them in the microwave. Please be cautious not to overheat them.

    Do not refrigerate our honey. It should be stored away from sunlight and heat, preferably at room temperature around 75 degrees.

    Our honeys are an excellent complement to cheeses, nuts and baked goods. They are the perfect sweeteners for yogurt and teas. They can add their distinctive aroma and flavor to meat marinades and other sauces.
